El Pollo Loco Chicken
Had this today, and I must say it truly did taste like the real deal! Not one piece left!
1/4 cup melted butter
1/4 cup corn oil
1/4 cup onion, minced
2 T. garlic, finely miniced
about 2-3 drops of yellow food color
1/4 t. dried cumin
1 t. dried oregano
4 T. fresh lemon jiuce
4 T. fresh orange juice
1 chicken 3 pounds, halved (make two if you have big eaters)
Combine the butter, oil onion,garlic, food coloring, cumin lemon and orange juice is a large shallow pan. Add the chicken halves, and turn to coat with the marinade well. Cover and allow to marinate for several hours or overnight.
Remove chicken from marinade, then cook over medium coals on the BBQ grill or you can use a broiler 4 inches under heat source, until browned on both sides and the meat is done, turning and basting often, about 30 minutes.
Cut the chicken halves into pieces and serve.
NOTE:
I did not marinate over night, and it was still good.
We served this with Avocado, onion and tomato salad, and baked beans.
The margaritas helped as well!
