    One dish to mix, cook and serve from:

    In a 9 X 13 baking pan:

    I large bag of sauerkraut rinsed and drained, spread on bottom of pan. ( snip a few holes in top of bag to rinse...snip a few holes in bottom of bag to drain)

    On top of sauerkraut add a layer of 1 1/2 lbs of chipped or shaved deli corned beef.

    On top of that pour one bottle of thousand island dressing.

    cover that with 2-3 cups of shredded swiss cheese.

    8 or 9 slices of good rye bread cut into cubes, can leave crust on or off. With seeds or without.

    Melt 1/4 Cup of butter or margerine and pour over bread cubes and toss to lightly coat.
    I do this in a ziploc bag so no cleanup.

    cover top of casserole with bread cubes and press into place.

    Bake 350 degrees for approx 1/2 hour or till toasted and golden.

    Serve with salad for a light dinner.

    Serves approx. 6 as a main dish.
