Pat's Spinach Quiche
mix together (bottom)
1/4 cup of milk
1 cup of Bisquick
1/4 cup of chopped onion
2 eggs
mix together (top)
1 egg
1 - 12oz. container of cottage cheese
1/2 cup grated cheese
4oz. swiss or monterey jack cheese
1 - 10oz frozen chopped spinach
I coat my pan with PAM first then I pour in my bottom or base. Next I pour in the top mixture.
Bake at 400 degrees for 15-20 minutes. sometimes longer. I like to see the top slightly browned.
