    I played around the other night and came up with this...it was FAB!!! My DH was looking for 3rds and 4ths!!! It hits EVERY taste bud in your mouth...Salt/crunch from the walnut, creamy/smooth from the Brie, Sweet/crisp from the apple, and tart/chewy from the craisons!!!

    Brie stuffed chicken

    4 chicken breasts, pound thin
    1 pkg refrdg pie crust rolled out
    1lb brie (mold removed please! Roll Eyes )
    1/2c craisons chopped
    1/2c walnuts chopped
    1/2 golden del apple, small dice
    Place brie in micro-safe bowl and melt in microwave for 30secs on high. Mix in apples, craisons, walnuts. Cover and set in fridge for about 1hr.
    With chicken pounded thin, divide brie mixture between the 4 breasts, and roll chicken to encase brie. Cut pie crust to make 4peices. Roll chicken in pie crust to TOTALLY ENCASE CHICKEN. Place in pyrex bake dish, cover with foil, Bake at 350 for about 30mins. Uncover and bake until crusts are golden brown. Let sit on counter about 10mins. Serve.
