  • Taco Casserole---Crockpot

    This dish is a kid favorite!! My kids and co workers really enjoyed this. It comes out kind of soupy, but I just served tortilla chips on the side. That way people can scoop it up with their chips if they want.
    My crockpot runs hot, so I didn't have to use the full cooking amount it calls for. I think mine was done at around 4 or 5 hours. I've never used cream of onion soup before so I was kind of leery about trying the recipe. I'm glad I tried it!! :)


    1 1/2 lbs ground beef, browned
    14 1/2 oz can diced tomatoes with chiles
    10 3/4 oz can cream of onion soup
    1 pkg dry taco seasoning mix
    1/4 c. water
    6 corn tortillas cut into 1/2" strips
    1/2 c. sour cream
    1 c. shredded cheddar cheese
    2 green onions, sliced, optional

    Combine beef, tomatoes, soup, seasoning mix and water in slow cooker. Stir in tortilla chips. Cover.Cook on low 7-8 hrs. Spread sour cream over casserole. Sprinkle with cheese. Cover. Let stand 5 minutes until cheese melts. Remove cover. Garnish with green onions if using. Allow to stand for 15 minutes more minutes before serving.

    Makes 6 servings
