    Got this one from a Bisquick booklet and it is quite good!

    Baked Turkey, Cheddar and Bacon Sandwich

    2 cups Bisquick
    1 cup milk
    1 egg
    4 oz thinly sliced turkey breast (I used 8 oz)
    1 1/2 cups shredded Cheddar cheese
    5 slices bacon, cooked (I used a 12 oz package)

    Heat oven to 400 degrees F. Spray 8 " square glass baking dish with cooking spray.

    In a medium bowl, stir Bisquick, milk and egg until blended. Spread half of the batter into baking dish. Top with turkey and 1 cup of cheese. Top with bacon. Spread remaining batter over bacon.

    Bake uncovered 28-30 minutes or until golden brown and center is set. Sprinkle with remaining 1/2 cup cheese. Bake about 3 minutes longer or until cheese is melted. Let stand 5 minutes before cutting.

    My sweetie loved this and took the leftovers to work. He liked that it is good cold or reheated, since sometimes he doesn't have the time to heat his lunch. I thought maybe I would try some other meat/cheese combinations for him. If you do/have, let me know.
