Justin Wilson's Shrimp & Zucchini:
Serves 4-6
I've never tried this before but intend to here soon.
2 Tbls.olive oil
1 c.chopped yellow onion
1 c.chopped fresh parsley
1 c.dry white wine
1 c.water or fish stock
1 Tbls. minced fresh garlic
6 c.sliced zucchini(Or other summer squash)
salt to taste
ground cayenne pepper or Louisiana hot sauce to taste
2 Tbls.lemon juice
1 lb.shrimp,peeled & deveined
Heat the olive oil in a large saucepan over med-high heat & saute onion & parsley til onions are clear.Add wine,water & garlic,continue cooking for 10 minutes.Stir in the zucchini & add salt,pepper & lemon juice.Cover w/a lid & bring to a boil.Stir in the shrimp,bring back to a boil,reduce the heat to low,cover & simmer for at least 30 minutes,stirring occasionally.
