Corny Chicken Wraps:

Yields 6 servings


1 lb.boneless,skinless chicken breasts,cut into strips
1/2 c.chopped green pepper
1/4 c.chopped green onions
2 tsp.veg.oil
1-1/2 c.frozen whole kernel corn,thawed
1-1/2 c.salsa
1/4 c.sliced ripe olives
1/2 tsp.chili powder
6(8") flour tortillas,warmed
1 c.(4oz.)shredded reduced fat cheddar cheese

In a non stick skillet,saute the chicken,green pepper & onions in oil for 3-4 minutes or til chicken juices run clear,drain.Stir in the corn,salsa,olives & chili powder.Cook & stir over medium heat for 3-4 minutes or til heated thru.Spoon about 1/2 c.chicken mixture over one side of each tortilla.Sprinkle with cheese,roll up & secure with toothpicks.
