    MONTEREY CHICKEN BREAST MELTS

    (Chicken Breasts, bread crumb dusted, filled and topped with melted Monterey Jack Cheese).

    2 Chicken Breasts
    ¼ Cup Grated Parmesan Cheese
    ¼ Cup Italian Bread Crumbs
    1 Tbsp. Parsley
    1 Tsp. EACH Oregano, Basil and Garlic Powder
    ¼ Tsp. Pepper and Salt
    4 Tbsps. Softened Butter
    1 Block (5 oz.) Monterey Jack Pepper Cheese

    4 Toothpicks

    Preparation:

    POUND breasts with a mallet to flatten.

    COMBINE parmesan cheese, bread crumbs, oregano, basil, garlic powder, salt and pepper.

    SPRINKLE flattened breasts each with a tablespoon of the bread crumb mixture (2 tablespoons used here total). Remaining crumbs used later.

    NEXT place a small amount of butter along with a 1/4" slice of Monterey Jack Pepper cheese on to each breast.

    ROLL up or fold best you can and secure with a toothpick.

    BRUSH each breast with softened butter and sprinkle the tops and sides with the remaining bread crumb mixture.

    PLACE on a glass baking (pie) dish and bake uncovered at 400 degrees for 20 - 25 minutes.

    When time is reached, place another 1/4" slice of Monterey Jack Pepper cheese over each breast top and return to oven for another 2 - 3 minutes longer, just enough to melt the cheese on top.


    SERVE WITH...

    BROCCOLI WITH MONTERAY SAUCE

    1 Fresh stalk of broccoli (enough for 2 people)
    1 Small Onion Chopped
    1 1/2 Tbsp. Butter or margarine
    1 1/2 Tbsp. All-purpose flour
    ¾ Cup Milk
    ¼ Cup Grated Monteray Jack Pepper Cheese
    ¼ Cup Cheddar Cheese
    1/4 Tsp. Salt and Pepper
    2 Tbsps. Dry bread crumbs

    COOK broccoli in boiling water for 5 - 10 minutes. Drain well.

    SAUTE' onion in butter for 2 minutes. Add flour. Stir until absorbed by butter.

    ADD milk, and stir. Cook over med-high heat for 5 minutes - continue stirring. Mixture will thicken.

    STIR in grated Monterey Jack and Cheddar cheeses, salt, pepper.

    PLACE broccoli in two oven safe bowls or a casserole dish. Pour sauce over top of broccoli. Sprinkle tops with bread crumbs.

    BAKE uncovered at 375 degrees for 5 minutes.
