FILET MIGNONS IN ROASTED RED PEPPER SHELLS
(Filet Mignons in roasted red pepper shells with a spicy garlic cream cheese topping)
2 Filet Mignons
1 Bottle McCormicks Grill Mates Spice Jar (MUST READ "Spicy" Montreal Steak Seasoning)
1 Large Red Bell Pepper
Cream Cheese Topping
1/2 Box 8 oz. box of Cream Cheese
1 Large Clove of Garlic - Pressed
1 Tsp. Spicy Montreal Steak Seasoning
Dash Paprika / Parsley (dry)
Mix cream cheese topping together in a small bowl. Place in fridge to chill.
Cut pepper in half lengthwise. Clean and place on grill cooking the insides first. Grill steaks as well turning both the peppers and steaks when done on one side. Watch not to burn pepper shells, place on a less hot area of grill if blackening. When desired doneness for steaks is reached, place each steak in one of the pepper halves. While everything is still on grill splash about 1 tablespoon of lemon juice onto each steak in shell. Turn grill off and allow to rest for 1 minute.
Slide pepper half with steak on to plate adding a good dollop (or two!) of the cream cheese mixture to the top.
Serve remaining cream cheese in a small bowl, add more if desired -- and it will be desired. : )
