Recently my husband and I visited our son and his wife in Chicago. He prepared the chicken and his wife prepared wonderful risotto to go with it. I was real fancy and opened a bag of salad as my part of the meal!! What a wonderful meal!!! (And if you think you will be breathing garlic for days.. you're wrong.)
40 Cloves and a Chicken
from the Food Network
1 whole chicken (broiler/fryer) cut into 8 pieces
1/2 c. plus 2 T. olive oil
10 sprigs fresh thyme (I am having to use bottled)
40 peeled cloves garlic
salt and pepper
Preheat oven to 350 degrees
Season chicken with s & p. Toss with 2 T. olive oil and brown on both sides in a wide (caste iron is best) fry pan or skillet over high heat. Remove from heat, add oil, thyme, and garlic cloves. Cover and bake for 1 1/2 hrs. Daren didn't cover his. So delicious and tender!! And suprisingly didn't taste too garlicky!
Let rest for 5 - 10 minutes before serving
My son added the garlic cloves while browning the chicken.
Suggestion on son's recipe: Bread: Brush leftover oil on bread. Spread a garlic clove on bread. Sprinkle with Parmesan cheese.
