Beef stroganoff
Serves 6
1 1/2 lbs beef tenderloin or boneless toploin(about 1/2 in thick) cut into strips, each 1 1/2 in x 1/2 in
2 Tbsp marg or butter
1 1/2c beef boullion
2 Tbsp catsup
1 sm clove garlic,minced
1 tsp salt
8 oz fresh mushrooms,sliced
1 med onion,chopped
3 Tbsp flour
1 c dairy sour cream
3 or 4 c hot cooked egg noodles
1 Tbsp marg or butter
Cook and stir beef in 2 Tbsp butter in 10in skillet over low heat til browned. Reserve 1/3c boullion. Stir in remaining boullion, the catsup, garlic and salt into skillet. Heat to boiling; reduce heat. Cover and simmer until beef is tender, 1 to 1 1/2 hrs.
Stir in mushrooms and onion. Cover and simmer til onion is tender. Shake reserved boullion and the flour in tightly covered container; stir gradually into beef mixture. Heat to boiling, stirring occ. Boil and stir 1 min; reduce heat. Stir in the sour cream; heat through. Toss noodles with 1 Tbsp butter. Serve beef over noodles.
*I have used round steak when money was tight and it was good too *
