Cashew Chicken:
This is not the origional Springfield,Mo. recipe.None the less its still really good!
Serves 4
3 boneless,skinless chicken breasts,cubed
1 tsp.salt
1 tsp.sugar
3 Tbls.water
1 Tbls.soy sauce
3 Tbls.cornstarch
1 egg,beaten
2 Tbls.veg.oil
1/2 tsp.ground ginger
2 minced garlic cloves
1 tsp.accent,opt.
1/2 c.boiling water
1/2 c.chopped green onions
1 c.cashews
Marinate chicken in 1 tsp.salt,1 tsp.sugar,1 Tbls.soy sauce & 3 Tbls.water for at least 30 minutes(Double marinade recipe if necessary).Remove from marinade & dip in cornstarch,then in beaten egg,
Put 2 Tbls. oil in heated skillet,drop chicken into skillet.Cover & cook 15 minutes at medium heat or til all water is gone from batter.Remove lid for a minute or so for crispiness.
To the skillet add garlic,ginger,water,accent & any marinade that may be left.Add cashews last & sprinkle green onions over.Serve over rice.
