Sweet and sour Meatloaf
This was originally posted by Beth in TX. I had to cut the bread crumbs in half because it was just to dry with the full cup. I think she even suggested doing that. I also double the sauce recipe and istead of just pouring it over the meatloaf I slice it and then pour it over to let the juices seep in.
Meatloaf:
1 1/2 pounds hamburger
1/2 c. dry bread crumbs
1 tsp. salt
1/4 tsp. pepper
2 eggs
1 tsp. minced onion
1 15 oz. can tomato sauce, divided
Topping:
Reserved tomato sauce
2 tbsp. brown sugar
2 tbsp. vinegar or lemon juice
1/2 c. sugar
2 tsp. prepared mustard
Mix together hamburger, bread crumbs, salt, pepper and eggs. Add onions and 1/2 of
tomato sauce. Form into loaf in 9x5x3" pan. Bake at 350 for 50 minutes.
In saucepan,
combine topping ingredients; bring to a boil. Pour over meatloaf and bake 10 minutes more.
