1 lb chicken (boneless breast)
1 lb smoked sausage
1 lb bacon
2 cups rice
2 16 oz cans of whole tomatoes
1 lrg onion
2 garlic cloves
2-4 bay leafs
4 cups liquid (from tomatoes)
Lousiana hot sauce

Fry bacon, while bacon is frying drain liquid from tomatoes & save the juice. Peel onion & garlic cloves & chop up.

Fry chicken & sausage. Add onion & garlic and saute all together till onions & garlic are cooked. Now add parsley & bay leaves.

Add your rice, then your tomatoes.

Add enough water tomatoe juice to make 2 cups, then add juice to mixture.

Last - bring to a boil then turn down to simmer. About 30 minutes.
