    Cheesy Corn Tortilla Bake

    from Pace

    8 corn tortillas (6 inch)*
    2 tbsp vegetable oil*
    1 lb ground beef
    1 jar (14 oz) Pace Mexican Creations Verde with Tomatillos and Jalapenos cooking sauce
    2 cups shredded cheddar jack cheese
    1 medium tomato, chopped

    Stack tortillas and cut into 1/2" strips. In 12" skillet over medium-high heat, heat 1 tbsp oil. Add half of tortilla strips and fry until golden brown. Remove and drain on paper towels. Repeat with remaining oil and tortilla stips.

    Preheat oven to 400. IN same skillet over medium high heat, cook beef until browned. Add verde cooking sauce.

    In 2 qt shallow baking dish, layer half of fried tortilla strips. Top with meat mixture, half of cheese, tomatoes, remaining fried tortilla strips and remaining cheese. Bake 15 minutes or until hot.

    serves 4.

    *Or use 4 cups coarsely broken tortilla chips and omit corn tortillas and oil
