Blackeye Peas of Texas Casserole
This has been a favorite in my family. Hope you like it also.
1 15 1/4 oz Can Jalapeno Black Eye Peas (mild or Hot)
1 12 lbs ground meat, cooked
1 large onion chopped
2 garlic cloves chopped
1 10 oz can Rotel tomatoes
1 can Cream of Chicken Soup
1 Can Cream of Mushroom Soup
1 10 oz Can Enchilada Sauce
1 1/4 dozen corn tortillas, broken up
2 cups chedder cheese, grated
Cook hamburger meat. Drain off juice from Can of Jalapeno Black Eyes. Add to hamburger meat in large bowl. Add onion & cloves. Mix in Chicken Soup, Mushroom Soup and can of Enchilada sauce. Add 1 cup of cheddar cheese. Mix all together.
Grease casserole dish with margarine or butter.
Put cup up corn tortillas in bottom of dish. Pour in the rest of the mixed ingredients and sprinkle the other cup of cheddar cheese on top. Bake at 350F for 35 minutes until bubbly and cheese has melted. Enjoy.
Note: If you want the casserole less spicy, use a regular can of blackeye peas and use only half a can of Rotel tomatoes or stewed tomatoes if preferred.
