Breakfast Burritos
2 sticks Owens Italian Sausage
5 potatos (peeled and chopped)
1/2 onion (chopped)
4 eggs
Salt and Pepper
enough oil to fry potatos
Flour tortillas
Salsa (I use Mild Chunky Picante Sauce)
drizzle a couple tbs oil in a large skillet. Squeeze the sausage out of the membrane into the skillet. Use a spatula to break it up into small pieces. Brown till done. Remove sausage. Heat enough oil to fry potatos. Add potatos. Salt and Pepper. When the potatos begin to soften, add onion. Cook till potatos are done. Drain. Put the sausage back in and mix. Add eggs and mix till done. Serve in tortillas with salsa.
Makes enough for 4 people.
