    Pesto Party Squares-Pampered Chef

    **Great appetizer for a holiday party**

    1 1/4 cups round buttery crackers (about 30), crushed.
    3 TABLESPOONS butter or margarine, melted ***Note Doreen made these and suggests to add more butter***
    2 packages (8 oz each) cream cheese, softened
    1 container (7 oz) prepared pesto
    1 container (8 oz) sour cream,divided
    3 eggs
    4 green onions with tops, thinly sliced
    1 plum tomato, seeded and chopped

    1. Preheat oven to 350 degrees. Using pizza dough roller, finely crush crackers in a sealed ziplock plastic baggie. Combine cracker crumbs and butter; mix well. Press crumb mixture onto bottom of a 9" x 13" pan. Bake 15 mins.

    2. Whisk cream cheese and pesto in 2 Qt. bowl until well blended. Add 1/3 cup of the sour cream and eggs; whisk until smooth.

    3. Spread mixture with a soft spatula over crust. Careful not to pull up cracker crust. Bake 20-25 mins or until center is set; remove to cooling rack.

    4. Carefully spread remaining sour cream over hot filling with a spatula. Cool; refrigerate at least 3 hours. Just before serving, cut into squares. Sprinkle with green onion and tomato.

    Yield: 40 squares

    ***TIPS: Use prepared pesto found in the fresh produce or refrigerated section of the grocery store.

    Recipe can be made up to 24 hrs ahead as recipe directs....except for topping with veggies until last moments before serving. Cover and refrigerate overnight.
