    Here's what I did with my leftover roast chicken last night, and let me tell you that it is even better today cold then it was last night!

    Chicken Chow Mein.
    2 tbls. peanut oil
    2 cloves garlic, minced
    1 lb. cooked chicken, sliced
    2 carrots, peeled and sliced diagonally
    8 oz. bamboo shoots, drained
    4 oz. celery, chopped
    8 oz. mushrooms, sliced
    2 c. chicken stock
    8 oz. bean sprouts
    4 onions cut into wedges
    2 tbls. soy sauce
    2 tbls. corn starch
    salt and white pepper to taste
    Chinese noodles
    steamed white rice

    Heat a large pan over high heat and add in the peanut oil. Quickly saute the carrots. Add in the onion and garlic and stir-fry for 3 or 4 minutes. Add in the garlic, bamboo shoots, celery, mushrooms and chicken. Stir for 3 minutes. Add in 1 1/2 cups chicken stock and stir. In a separate small bowl, mix the soy sauce, 1/2 cup chicken stock and cornstarch. Add the bean sprouts into the chicken mixture and pour in the corn starch mixture. Stir until sauce becomes clear and thickens. Serve over fresh steamed rice and sprinkle with Chinese crisp noodles.
