Texas Jack
4 slices bacon,diced
1 med onion, sliced
1 med green pepper,diced
2 1-pound cans red kidney beans, drained
1 8 oz can tomato sauce
1 tbls chili powder
1/2 tsp salt
1/4 tsp pepper
1/2 pound cheddar cheese, grated
6 frankfurters, sliced
6 english muffin halves, toasted
Fry bacon until crisp and drain on paper towel. Saute onion and green pepper in bacon drippings until soft. Add beans, tomato sauce, seasonings, bacon, and cheese. Stir over low heat until cheese melts. Add sliced frankfurters and cook until heated through. Spoon over toasted english muffins.
