4 chicken breasts boned and skinned
1/2 to 1 tea. cajun seasoning
1 tablespoon vegetable oil (i needed a little more)
1/4 C. Sliced green oinon
2 Tablespoons white vinegar
6 Tablespoons hot pepper jelly
1/4 C. defatted broth
Sprinkle chicken with cajun seasoning. In large non stick pan . Med to high heat brown chicken.Remove set aside. Add to dripping onions and cook 2 min.add vinegar jellyand broth.(i also added more broth)stirring till jelly melts.
Return chicken to pan, spoon glaze over chicken
Cover and cook till tender. Rmove chicken turn heat up till glaze thickens slightly. Spoon over chicken
A lilltle warm but I liked it very much
