Brunch today -
These turned out real nice. A keeper for sure. I didn't have the pineapple tidbits and used crushed - well drained.
Oh and YES, I added chopped jalapenos to the batter. Next time to the sauce! YUM
Our Famous Orange Pancakes and Sauce

Serving Size : 6
Pancakes
2 cups Bisquick® baking mix
1 cup orange juice
2 eggs
Sauce
1/4 cup sugar
1 tablespoon cornstarch
1 1/4 cups orange Juice
2 tablespoons butter
8 ounces pineapple tidbits in juice -- drained
1 medium banana -- sliced
Pancake:
In a medium bowl, stir together Bisquick mix, orange juice and eggs. For each pancake, pour about 3 tablespoons of batter onto a hot, lightly greased griddle or heavy skillet. Cook over medium heat about 2 minutes on each aide or until golden. Keep warm while remaining pancakes cook and while sauce is made
Sauce:
In a small saucepan, combine sugar and cornstarch. Stir in orange juice. Cook and stir over medium heat until thickened and bubbly. Cook and stir 2 minutes more. Remove from heat. Stir in butter and pineapple. When sauce is warm, stir in banana and pour over pancakes. Serves 6

NOTES : Recipe from Florida's Natural Premium Brand Orange Juice
Suzi's Notes:
These are excellent for anyone who like the citrus taste. I used the Tropcacana Brand Orange Juice with "Lots of Pulp". Batter was a little stiff so I added about 1/8 cup water to thin it down. Batter was still thick but cooked up very well. I also did not pour over pancakes. I served the sauce on the side. The way my hubby eats pancakes, this will make 2 servings.
