Amount Measure Ingredient -- Preparation Method

1 pound ground beef -- cooked
1 can refried beans
1 medium onion -- minced
2 chili pepers -- diced
2 pints tomato sauce
lots hot sauce
1/2 teaspoon salt
1 egg -- beaten
1/2 pound cheddar cheese -- grated
12 soft tortillas
2 Tablespoons olive oil
2 large cans red sauce
oil, for frying
Heat 1/2 " of oil in skillet & fry tortillas about 15 seconds each side. Remove & pat off excess oil.
In seperate skillet heat 2 Tbsp olive oil & saute onion until tender, add chili peppers, garlic, tomato sauce, hot sauce, salt & pepper. Add ground beef & beans. Stir uncovered 10 minutes.
Pore small amount of red sauce into bottom of baking pan just to cover bottom. Dip tortillas in egg, fill with sauce mixture, roll & place in shallow greased baking dish. Pour remaining red suce over tortillas, top with grated cheese.
Bake uncovered at 350 degrees for 15 minutes.
