    CROCKPOT ROAST (French Dip Sandwich)

    This what we had last night.

    3-4 lb. beef roast
    1 can beer
    1 pkg. onion soup mix
    Trim fat from roast (not all of it). Put roast in crock pot and
    sprinkle with soup mix. Pour beer over top. Cook on low for about 8
    hours.
    Cut or pull apart meat to make sandwiches on hard rolls.
    Au jus makes an excellent dip

    I took took the meat and sprinkled Creole seasoning (salt free) all over it, and rubbed it in well. You can also use Mrs. Dash, but remember that the soup has lot's of salt. Then I seared it on all sides in a hot skillet with a little oil. Then I placed it in the crockpot.

    It is tender, and delicious! We had pickles, hot peppers, horseradish sauce, blue cheese, lettuce and whatever anyone wanted on their sandwich. Two salads, and all dipped into the sauce/dip.
