Sandy's Chicken Pot Pie
2 -3 split chicken breasts
some parsley
small onion chopped
rib of celery sliced
2 potatoes peeled and cut up
carrots, peeled and cut up
enough water and chicken broth to cover chicken in pot.
Cook chicken with onion, celery, parsley until almost done (about 45 min). I like to slow cook mine so I let it simmer for about 90 minutes. I then add the potatoes and carrots and let them simmer while I make the pot pie. When the dough is ready for the pot, take out the chicken and turn the heat up to boiling.
Pot Pie dough
2 C flour
1 tsp salt
2 eggs, lightly beaten
1/4 to 1/2 C water
Mix eggs into flour with a fork. Add water a little at a time until dough is formed. Roll out using plenty of flour. Dough will be a little elastic and hard to roll. Cut into squares and drop into boiling chicken broth. You might have to add a little more water or chicken broth to cover everything. While the noodles are cooking you can shred the chicken and put it back in the pot. The noodles only need about 10 to 15 minutes to cook. The potatoes and carrots and chicken pieces keep the noodles from sticking together.
