1 pound ground beef
1 teaspoon salt
1 large onion -- chopped
1 teaspoon fennel seed
2 large cloves garlic -- crushed
1 teaspoon dried basil leaves
1 28 ounce whole tomatoes
2 10 ounce packages frozen chopped spinach
1 8 ounce mushrooms -- drained
2 cups creamed cottage cheese -- small curd
1/4 cup snipped parsley
1/3 cup Parmesian cheese -- grated
1/4 cup ground nutmeg
14 uncooked manicotti shells
1/4 teaspoon pepper
2 Tablespoons Parmesan cheese -- grated
bacon -- cooked, crumbled
Cook & stir ground beef, onion & garlic until beef is brown, about 10 minutes. Drain. Stir in tomatoes, ( with liquid), mushrooms, bacon, parsley, salt, fennel seed & basil. Break up tomatoes with fork. Heat to boiling, reduce heat. Cover & simmer beef mixture 10 minutes.
Spoon about 1/3 of the beef mixture in ungreased rectangular baking dish, 13x9x2".
Rinse spinach & squeeze until dry. Mix spinach, cottage cheese, 1/3 C. parmesan cheese, the nutmeg & pepper. Fill uncooked manicotti shells with spinach mixture, place shells on beef mixture in dish.
Pour remaining beef mixture evenly over shells, covering shells completely, sprinkle with 2 Tbsp. Parmesan cheese. Cover & cook in 350 degree oven until shells are tender, about 1 1/2 hours. (
