    Spanish Rice

    1 cup minute rice
    1 lb. ground beef or ground chuck whichever you prefer
    1 large chopped onion
    1 large 28 oz. can whole tomatoes cut into pieces as large or small as you like(including the juice) (home canned tastes best if you have them)
    american cheese
    salt and pepper to taste ( I use seasoned salt) but you can use regular

    Brown ground beef or ground chuck and drain fat. Add salt, pepper and chopped onion. Add tomatoes and minute rice and cook on top of stove for a few minutes just to combine ingredients. Put half of mixture in casserole dish and top with slices of american cheese. Add the rest of rice and put more cheese on top. Bake at 350 degrees for 30 minutes or until mixture is heated through and cheese is melted. Tastes good too with a pat of butter or margarine mixed in a serving before eating. You can alter these ingredients to your preferences. If you like it moister you can also mix in some tomato juice or water before cooking.
