    Terri’s Fiesta Spanish Rice Casserole

    1 ½ lbs ground beef
    2 onions, diced
    4-5 cloves garlic, chopped
    1 can cream of chicken soup
    1 or 2 cups of chunky salsa
    ½-1 cup water
    1 can whole kernel corn, drained
    1 can black beans, drained and rinsed
    2 cans chopped tomato
    ¾ cup uncooked white rice
    1 tsp chili powder
    ¼ tsp cumin
    1/8 tsp cayenne pepper
    American cheese, 4 cheese Mexican blend

    In a large pot over medium heat mix soup, salsa, water, spices and rice. Lower to a simmer and cook until rice is done, stirring often as rice will stick and burn. Add more water if necessary so that the Spanish rice is not runny.
    In another skillet, brown and drain 1 lb hamburger. Return it to the pan and add 1 or 2 onions, chopped and 2 – 4 cloves garlic, chopped and cook until the onions are clear. Then add 2 cans chopped tomatoes and cook down.
    In a 9 x 13 pan that has been sprayed with pam layer the hamburger mixture, 1 can of black beans that have been drained and rinsed, the can of corn and a layer of American cheese slices, the Spanish rice and then top with a 4 cheese Mexican blend.
    Bake uncovered at 350 degrees until hot and bubbly.
