    Quick Manicotti

    8-12 Manicotti shells (I use about 14 shells)
    1 lb. ground beef
    1 clove garlic, crushed (I use jar garlic)
    1 cup cottage cheese
    1 cup (1/4 lb) shredded mozzarella cheese
    ½ tsp salt
    Sm. Can of mushrooms
    ¼ cup mayonnaise
    Spaghetti sauce (I make my homemade sauce…you know, the one you took credit for! LOL)

    Cook manicotti shell’s; drain; rinse in cold water; drain and set aside. Sauté ground beef and garlic, stirring to crumble beef, until beef is no longer pink; drain off pan drippings. Add cottage cheese, mozzarella cheese, salt, mayonnaise and mushrooms to skillet; stir well. Stuff manicotti shells with meat mixture; arrange shells on lightly greased 13x9x2 inch baking dish. Pour some of your favorite spaghetti sauce over the stuffed manicotti shells. Cover and back at 350 degrees for 15 minutes. Uncover and bake an additional 10 minutes. You can also add a little more mozzarella cheese on top.
