    Amount Measure Ingredient -- Preparation Method

    1 cup wild rice -- uncooked
    4 ounces mushrooms -- sliced (about 1 1/2 cups)
    2 green onions -- with tops, thinly sliced
    2 Tablespoons butter
    2 1/4 cups water
    1/4 cup dry white wine
    1 teaspoon salt
    1/4 teaspoon pepper
    1 cup Monterey jack cheese -- (4 ounces)

    Cook & Stir rice, mushrooms & onions in butter in 10 inch skillet over medium heat until onions are tender, about 5 minutes. Stir in water, wine, salt & pepper. Heat to boiling. stirring occasionally; reduce heat. Cover & simmer until rice is tender, 40 to 50 minutes; drain if necessary. Stir in cheese.
