Here's a really good side dish that always goes over great with my friends.. this is one of my bbq dinner standby's and never disapoints..
Marilyn's Spanish Rice
1 lb. instant rice (not cooked)
1 lb. bacon, diced
1 green pepper, seeded, chopped
1 onion, diced
1 large can tomato juice
Preheat oven to 325. Cook the bacon, pepper and onion together until bacon is cooked, but not crisp. In a 9x13 pan, combine the bacon mixture, including the fat, rice and tomato juice. Bake uncovered for 1 hour.
