    Gary Solomon's Fried Broccoli with Bow Tie Pasta

    1 lg. head of broccoli, bite size pieces
    2 eggs, whisked
    2 c. Italian breadcrumbs
    1/2 freshly grated Romano cheese
    freshly cracked black pepper
    1 c. extra virgin olive oil
    1 stick butter
    3 cloves garlic, minced
    1 lb. bow tie pasta, cooked al dente
    red pepper flakes
    1 T. parsley

    Microwave the broccoli in a covered bowl with 1 inch of water for 2 minutes. Drain. Whisk eggs in a bowl with a splash of water. In a separate bowl combine the bread crumb, Romano cheese and black pepper. Dip the broccoli piece by piece into the egg. Drop it into the bread crumb mixture. Cup your hand around the broccoli piece and squeeze the bread crumb onto the broccoli. Heat a large pan and use half cup of the olive oil and half the stick of butter. Fry the brocoli until golden. Remove and place on platter. Add more butter and oil if necessary during cooking process.

    Remove the oil from the heat and cool slightly. Stir in 3 cloves of minced garlic. Sprinkle a little of the extra breadcrumb in pan also. Add the rest of the oil and butter into the pan with the red pepper flakes and the parsley. Add the pasta and broccoli and toss. Serve as a main or side dish.
