    One night I made up a casserole with stuff I had on hand. My hubby came up with the name.

    Burrito Lasagne

    1 lb. ground beef
    1 tbsp olive oil
    1/2 cup chopped onion
    1/2 cup chopped bell pepper
    4 cloves garlic, minced
    1 pkg taco OR burrito seasoning mix
    2/3 cup water
    1 tbsp chili powder
    1 tsp seasoned salt
    1 tsp ground cumin
    14 oz can chopped tomatoes w/juice
    14 oz can tomato sauce
    6 flour tortillas (soft taco size)
    2 cups shredded cheese

    Saute onions, bell pepper and garlic in olive oil for 5 minutes. Add ground beef and cook until browned and crumbly. Drain fat. Add all seasongs, tomatoes, tomato sauce and water. Bring to a boil. Reduce heat and simmer 10 minutes. In a 13x9 baking dish, spread about 1/2 cup of meat sauce. Top with 2 tortillas, then 1/3 of meat sauce and 3/4 cup cheese. Repeat layers. Top with 2 more tortillas, remaining meat sauce and 1/2 cup cheese. Cover with foil. Bake at 350 for 25 minutes. Remove foil and bake additional 5 minutes. Let stand 5-10 minutes before serving.
