Gary Solomon's 30-Minute Meatballs & Macaroni

Sauce:
1 lgr. can crushed Italian tomatoes
1/2 sm. can Hunts tomato paste
1 med. onion, chopped
1 garlic clove, crushed
4 T. extra virgin olive oil
Salt, pepper, basil, parsley
1 T. butter

Meatballs:
3/4 lb. chopped meat
1/2 c. Italian bread crumbs
1 egg, whisked
salt and pepper
parsley
1/4 c. Romano cheese, grated

Pour the olive oil into a preheated large pot. Add the onions and sautee for 5 minutes until limp. Add in all the other sauce ingredients and cook on medium heat for 5 minutes mixing constantly. Gently drop in the meatballs. Continue cooking for 20 minutes. Reseason if necessary and mix in a tablespoon of butter. Serve over macaroni.
