    VEGETABLE LO MEIN

    1 tsp vegetable oil
    2 cups fresh snow peas
    1 cup red bell pepper, cut into strips
    1 cup broccoli florets
    1/2 cup shredded carrot
    2 tbsp chopped green onions
    1 tsp fresh ginger, peeled and grated
    1/8 of a tsp crushed red pepper flakes
    2 cloves of garlic, crushed
    3 cups hot cooked vermicelli noodles, cooked without salt
    3 tbsps soy sauce
    1 tbsp water
    1 1/2 dark sesame oil

    In a wok or large skillet heat the vegetable oil. Add the snowpeas, pepper, broccoli, carrot, onions, ginger, pepper flakes and garlic to the pan and stir fry for 2 minutes.

    Add the vermicelli, soy sauce and water and stir fry for 30 seconds.

    Remove pan from heat, add the sesame oil and toss well.

    Serves 4
    (serving size 1 1/2 cups)
