Bartís Mac and Cheese

1 package macaroni
1/4 cup olive oil
1 Tablespoon minced garlic
1 lb. mushrooms, chopped
1-2 onions, chopped
2 cans Cream of Mushroom with Roasted Garlic Soup
1/2 cup milk (more if "too thick")
AT LEAST 3 cups shredded cheese (Mixture of Monterey Jack and Cheddar)
Cook pasta according to directions on box. Drain, rinse, and set aside.
Sautee garlic, mushrooms and onions in olive oil, until fully cooked.
Mix together in a large bowl: soup, milk and sauteed mixture.
Stir in pasta.
Butter a 9x13 pan. Spread half of pasta mixture in the pan. Cover with half of the cheese. Repeat.
Bake at 350 for 30 mins. *If cheese isn't completely melted, bake for 10 mins more.
