    Pasta with Vegetarian Sausage, Tomatoes, and Cream (a modified version of a recipe posted by HDMac)

    1 tablespoon olive oil
    1/2 of a sweet onion, diced
    3 or more cloves garlic, minced
    1 box boca meatless italian sausage (contains 4 sausages)
    1 can evaporated skim milk
    4 Roma Tomatoes, diced
    1/4 teaspoon crushed dried red pepper flakes
    1 1/2 tablespoons minced parsley
    1/2 teaspoon steak seasoning
    salt, to taste
    pepper, to taste
    Aprox. 2 Tablespoons cornstarch, mixed with a little milk
    cooked pasta
    grated parmesan cheese

    Sautee onion and garlic in olive oil until the onion is translucent. Crumble sausage with your fingers and add. Continue to sautee until lightly brown. Reduce heat and add evaporated milk, tomatoes, and seasonings. Cook on low for 5 to 10 minutes. Mix 2 Tablespoons cornstarch with a little milk and add. Cook until thickened. Depending on the type of onions and tomatoes you used, the sauce at this point may be too thick or too runny. If it is too thick, add milk a little bit at a time and stir. If it is too runny, mix a little more cornstarch with some milk and stir in, and cook until thickened. Serve with pasta and fresh grated parmesan cheese.
