    Just got this off of the recipe goldmine newsletter. Sounds worth a try. Carol, I bet it would be good without the meat too.

    Inside Out Ravioli

    1 pound ground beef
    1 medium onion
    1 teaspoon garlic, minced
    1 (10 ounce) package frozen spinach
    1 (32 ounce) jar spaghetti sauce
    1/2 teaspoon salt
    1/2 teaspoon pepper
    1 (7 ounce) package multi-colored corkscrew noodles
    1 cup mozzarella cheese, shredded
    1/2 cup bread crumbs
    1 (16 ounce) container small curd cottage cheese
    2 eggs, beaten
    1 cup grated Parmesan cheese

    Brown beef, onion and garlic in skillet. Drain off fat.

    Cook spinach according to package directions. Drain, saving liquid. Stir
    the liquid, spaghetti sauce, and salt and pepper into meat mixture. Simmer
    for 10 to 12 minutes.

    Meanwhile, cook noodles following package directions. Drain. Combine
    spinach, noodles, mozzarella cheese, cottage cheese, eggs and bread crumbs.
    Spread in a greased 9 x 13-inch baking dish. Top with meat mixture.
    Sprinkle Parmesan cheese over top. Bake at 350 degrees F for 30 to 40
    minutes. Let stand 10 minutes before serving.

    We tried this recipe tonight for dinner and it was a hit. I made the recipe as is and don't think I would make any changes. I also think it could be made vegetarian by omitting the meat and adding more spinach. This recipe is a keeper for us!
