  • Beans Cajun Chicken Pasta

    Bean Posted March 22, 2006 07:01 AM

I am on such a pasta kick! A few changes – I seasoned the chicken breasts and grilled them, used fresh garlic and no garlic powder and added sweet onion, and 1 t. Creole seasoning to it. I used jarred mushrooms (for DH).

    Cajun Chicken Pasta

2 each chicken breasts halves, skinless, boneless, chopped in thin strips
    2 teaspoons cajun seasoning
    2 tablespoons butter
    8 slices green bell pepper
    8 slices red bell peppers
    4 large mushrooms fresh, sliced
    1 each green onion sliced
    1 cup heavy cream (1 to 2)
    1/4 teaspoon basil
    1/4 teaspoon lemon pepper
    1/4 teaspoon salt
    1/8 teaspoon garlic powder
    1/8 teaspoon pepper
4 ounces pasta, linguini cooked, drained
1 x parmesan cheese grated (optional)

Place chicken and cajun seasoning in a bowl or resealable plastic bag; toss or shake to coat. In a large skillet over medium heat, saute chicken in butter until almost tender, about 5-7 minutes. Add peppers, mushrooms and onions; cook and stir for 2-3 minutes. Reduce heat. Add cream and seasonings; heat through. Add linguine and toss; heat through. Sprinkle with parmesan cheese if desired.

    - I added a few (about 10 slices) of jalapeno peppers to the chicken/butter/cajun seasoning mixture to give it a little kick

          Yum!!!!!!!!!!!

This was truly one of "the best" meals we've had...at least that "I've" made! LOL It was so unbelievably tasty...like something I'd eat at a nice restaurant. I served it with Bean's Celery Seed Bread and BOTH were outta this world!!!

Editing to add that when I stirred in my cream and seasoning, I also stirred in approx (I didn't measure) 1/4 cup of parmesan cheese. Most definitely will make this meal again!!! I used yellow & orange bellpepper because green doesn't set right on husbands stomach.

          My pic:

I love this stuff. I got the recipe (almost exactly the same) from allrecipes years ago and we still make it several times a year!

It's great, just don't cook it on high like I did!

                      Teresa, your pic looks yummy.
