I was so bored with the same old meals tonight that i threw this together and it came out really good and somewhat healthy.....

2 c cooked chicken breast, cubed
4 oz ham, diced
2 chopped roasted red peppers (from a jar)
1 c petite sweet peas
1 c fresh mushrooms, sliced
1 can cream of chicken with herbs
8 oz reduced fat sour cream
1/2 cup grated Parmesan or Romano cheese
1/2 - 3/4 c 1% milk
2 tbsp sherry cooking wine
6 oz whole wheat egg noodles, cooked and drained
Black pepper to taste
4 oz cheddar cheese blend

Combine all ingredients except cheddar cheese. Pour into baking dish prepared with Pam. Top with cheddar. Cover with foil, bake 350 for 25-30 minutes, remove cover and bake 5 minutes longer.

It was really good and reminded me of Turkey Tetrazzini. Next time I will top with sliced almonds as well. Crazy enough, even my 3 year old ate it. (he's really into those little green Hulk muscles lately
