    Here is a delicious rice recipe - good to serve as a side dish or just for lunch

    1 1/4 cups rice (use white, brown, wild or assortment)
    1/2 cup crushed pineapple drained
    1/2 cup raisins
    1 apple peeled and cubed
    1 onion chopped
    1 rib celery chopped
    1/4 tsp red pepper flakes
    1 Tbsp apple juice concentrate
    1/4 tsp turmeric or cumin
    juice from pineapple plus water to equal 2 1/2 cups
    2 Tbsp low sodium soy
    1 can water chestnuts - sliced - optional

    Combine together in casserole dish - can be cooked in oven or microwave - cooking directions are the same.

    For oven bake at 300 for 55 mins (or 50% power in microwve for 55 mins) - remove from oven and let sit covered for 15-20 mins, fluff with fork then serve.
