Coal Miner's Spaghetti: (Spaghetti alla Carbonara)
Serves 6
1 pkg.(16oz.)spaghetti
1 clove garlic,finely chopped
1 lb.sliced lean bacon,cut into 1" pieces
1 Tbls.olive oil
3 eggs
1/4 c.freshly grated Parmesan cheese
1/4 c.freshly grated Romano cheese
2 Tbls.chopped fresh parsley
1/2 tsp.pepper
freshly grated Parmesan cheese
freshly ground pepper
Cook spaghetti as directed.Meanwhile cook & stir garlic & bacon in oil til bacon is crisp,drain.Mix eggs,1/4 c.Parmesan cheese,Romano cheese,parsley & 1/2 tsp.pepper,reserve.
Drain spaghetti & immediately return to kettle over very low heat.Toss spaghetti quickly with egg mixture.Add bacon & olive oil mixture & stir.Top with Parmesan cheese,serve with pepper.
