This is a recipe I found in one of the little quick recipe magazines in the grocery store that I have tweaked a bit. Its a very easy weeknight dinner with lots of color and flavor.
Ingriedients:
-1 package cooked turkey sausage
-1 package small mushrooms
-1/2 red pepper
-1/2 yellow pepper
-1 green pepper
-1 box garden rotini (or other similar pasta like farfalle or rigatoni)
-1/2 - 1 cup Italian or olive oil and vinaigrette salad dressing
-2 T. olive oil (or vegetable oil)
-parmesan cheese
-salt, pepper, & Italian seasoning to taste
-2 or 3 T. garlic (if desired)
Boil the water for the pasta while chopping. Slice turkey sausage to desired thickness; ¼ - ½ inch thick. Set aside. Cut mushrooms into thick slices and julienne the peppers. Cook pasta, rinse lightly (the starch helps it all stick together) drain, and set aside.
Heat oil over medium heat in a large skillet. (I like using my electric wok because it is so big and everything cooks so evenly). Sauté peppers until slightly soft, add mushrooms. Cook until they start to brown. Add minced garlic and seasonings. Add turkey sausage and brown until the veggies are cooked through. Add pasta and stir in the dressing. Keep stirring until it warms and starts sizzling again (dressing is usually cold when added). Sprinkle parmesan cheese over it and stir it some more to get the cheese worked through. Remove from heat and serve immediately.
Makes about 8 servings.
(Sorry if the amounts aren’t precise – I’m a “little bit of this dash of that” kind of cook so you will have to use what seems right to you.)
