    My sister made this the other night and it was really good.

    1 lb. Ground Beef
    1 Box Rotini
    1 Packet Taco Seasoning
    1/2 cup chopped onion (I used frozen)
    1 can corn, drained
    1 can black beans, drained
    1 can tomatoes with green chilies, drained
    8 oz sour cream (buy 12 oz. – use remaining as add on)
    1 jar taco sauce
    1 package shredded Mexican cheese
    ¼ cup green chilies, if desired

    Preheat oven to 400 degrees.
    Brown beef and cook according to the instructions on Taco Seasoning packet. Cook Rotini according to directions and drain. Once beef is complete, and add chopped onions. Cook over low heat for about 5 -10 min., stirring occasionally. Add in corn, black beans, and tomatoes. Stir. Add Sour cream and taco sauce, stir some more. Carefully add the beef mixture to the Rotini. Stir until all the Rotini is coated and transfer mix into a deep 9x13 pan. (It should fill the pan.) Top with cheese and bake for about 20 min. Serve with a side of sour cream.
