    Zippy Skillet Rice

    1 cup rice uncooked
    2 Tblsp butter
    1/2 c each green pepper and onion
    2 cloves minced garlic
    2 cans ( 14 oz. each) diced tomatoes
    1 tsp. chili powder
    1 tsp salt
    1/2 tsp. pepper
    1/2 tsp tumeric
    1 lb. ground beef
    1/2 cup shredded cheese, optional

    Brown beef in large skillet, drain. In same skillet, saute rice in butter. Add onions and peppers and garlic. Cook about 5 minutes. Add back beef and remaining ingredients (except for cheese) Cover and simmer for about 25 minutes. Stirring once or twice until rice is tender. Sprinkle with cheese before serving.

    I rarely add the cheese and I used a can of enchalada sauce for a different taste this last time I made this.
