    This is a great dish served around here with fried chicken, but I like it with ham, too. Since some of you are cooking for holiday crowds I thought I would post it. It makes a TON. You can cut the recipe in half if you want.

    Hot Rice

    1 gallon whole peeled tomatoes (#10 can)
    3 C. dried onions
    2 C. sugar
    1/2 C. oil
    Salt to taste
    1 Tb. crushed red pepper
    3 C. Uncle Ben's converted rice (uncooked)

    Mix all ingredients except rice in large pot. Simmer until hot. Cook rice just until chewy. Rinse in tepid water and drain. Turn off heat under tomato mixture and add rice. Simmer.
    (If rice is cooked too long it will get mushy after added to tomato mix!)
