    Carrot Pudding:
    (Budino di Carote)
    Serves 8

    2 qts. water
    1 Tbls.salt
    2 lbs.medium carrots,pared & cut crosswise in half
    1 medium baking potato(About 6 oz.)pared & cut into fourths
    1 c.mayonnaise or salad dressing
    1/2 c.chopped black olives,pitted
    1/2 c.chopped pitted green olives
    1 Tbls.chopped fresh parsley
    1 tsp.chopped fresh dill weed
    1 small onion,chopped(about 1/4 cup)


    Heat water & salt to boiling.Add carrots & potato.Boil uncovered 18-20 minutes or til tender,drain & cool.

    Place carrots & potato in food processor or blender,cover & process til smooth.Mix carrot mixture & remaining ingredients,cover & refrigerate 2 hours or til chilled.
