I was just reading thru the cookbook that I bought for my swap partner and came across this interesting and easy recipe. It's not Tried and True - Yet, but, since there is no other forum to post to, this will have to do. If anyone tries it out let us know what you think.

Frozen Butter Mint Salad

1 can (20 oz) pineapple, drained
1 small box of lime gelatin
1 box (12 oz) butter mints
1 carton (12 oz) whipped topping

Mix pineapple and dry gelatin mixture and refrigerate overnight. Crush mints. Add mints and whipped topping to gelatin mixture and freeze. Serves 10
