I kinda tweaked a recipe I had for a spinach salad, and it was great!
    Here it is:

1/2 lb bacon, cut into pieces
    4 garlic cloves, chopped
    juice of one lemon
    2 tablespoons sugar
    5 Tbs water
    bag of fresh spinach
    fresh asiago cheese

Fry the bacon until almost crisp and add the garlic, saute for a couple of minutes and turn off the heat. When cooled enough not to spatter, add the lemon juice, sugar and water, and simmer for a few minutes. Toss spinach in a bowl with the grated asiago cheese (I used a larger grate). Pour on the warm dressing.
This is not as sweet as most spinach salads, but very tasty!

Let me share this recipe with you all.

    1 Pound Fresh Spinach
    1/2 Pound Sliced Mushrooms
1 Pound Bacon, Cooked Crisp, crunched up
1/4 - 1/2 Cup Fresh Parmesan Cheese, Grated
    4 Eggs, Hard Boiled

    1. Wash Spinach, Dry thorougly and tear into bite size pieces. Remove stems.

    2. Wash and dry and slice mushrooms.

    3. Combine spinach, mushrooms and bacon in large salad bowl (I use a wooden one). Sprinkle cheese on top. Pour on Dresssing and toss. Garnish with eggs, cut into quarters. Serve immediately.

Dressing: 1 Tsp Janes Krazy Salt (if Avail)
    1/4 Tsp Dry Mustard
1 Tsp Dijon Mustard (if avail, or
    any other you have
1 pkg Splenda or Sugar Twin, Equal
    1 Tsp Lemon Juice
2 TBLS Tarragon Vinegar or Rice
    Vinegar or what you prefer
    2 TBLS Olive Oil
    2 TBLS Vegetable Oil
    1 Egg, beaten
    1 Tsp Garlic Powder.

    1. Mis all ingredients together with wire whisk and pour onto Salad. This can be made ahead of time and kept in the Fridge. Also a great dressing recipe for Caeser Salad.
NOTE: If desired, can add onions cut into rings and some baby shrimp
This recipe complements of Dr Atkins many years ago...Enjoy!!
